An undisputed leader of European charcuterie, this melt-in-your-mouth prosciutto is produced in Carpegna – a small village inside a territory that stretches between the Emilia Romagna, Marche and Tuscany regions of central Italy – from local Pesante Pedano “heavy” pigs. Here, they forage amidst lush green hills, natural pastures, and woodlands where the Adriatic Sea breeze meets the mountain air of the Apennines, offering a pure microclimate particularly suited to the growth and development of this nuanced one-of-a-kind ham.

The guidelines for producing Prosciutto di Carpegna DOP are among the strictest in existence. What makes the prosciutto even more unique is the special secret mix of spices utilized by ten master butchers, or Maestri Salumai. During the processing phase, known as “stuccatura”, the ham is cured with the famous sweet Cervia sea salt, and the surface of the ham not covered by the rind is seasoned by hand a blend of lard and spices that gives Carpegna PDO its sweet, penetrating aroma, its tender texture, and sweet, nutty, delicate, and pure flavors.

Marco Pulici, Vice-President of the Prosciutto di Carpegna PDO Consortium notes: “Our campaign ‘The Eu Gem Ham: Prosciutto di Carpegna PDO’ aims to shed light on the numbers that allow our product to be recognized with the quality mark. Just three Italian regions allowed for the origin of the ingredients, 10 months is the minimum age of the pig before it can be slaughtered, 12kg is the minimum weight the hams must be during curing, 14 months is the minimum required curing time and, lastly, a brand marking that certifies its origin”.

Distributed nationally across the United States, Prosciutto di Carpegna is a delightful addition to seasonal charcuterie boards, salads, savory pastries, pizzas, pastas, risottos, and more. Its flavor is enhanced by typical red Marche wines such as Rosso Conero DOC or Rosso Piceno DOC, or full-bodied dry and soft white wines.
