The protected cured meats are:
– Superior quality products, guaranteed by the controlled supply chain, by the raw materials at all stages of processing;
– More sustainable products, with production techniques that consider the impacts on the environment and the community;
Prosciutto di Carpegna PDO is a raw and seasoned cured meat, with a sweet and delicate flavor, enlivened by a mix of aromatic notes, including paprika.
It is very easy to be won over by the extremely soft texture of the slice, by the characteristic color that ranges from amber red to salmon pink in the leaner areas, and by the light and inimitable scent of the spices that accompany its maturation.
The particular taste of this ham is the result of conditions unrepeatable elsewhere: the craftsmanship techniques refined over time, the temperate microclimate of the area, the daily commitment of those who have been producing it for centuries.
Prosciutto di Carpegna PDO is the perfect companion for a thousand occasions. It is ideal, for example, to be enjoyed alone, in combination with bread, to enrich dishes and appetizers, or even as a special ingredient to create intriguing recipes.
The ancient origins
of a taste projected into the future
The green and luxuriant hills of Montefeltro, in the Italian region of Marche, are the cradle of Prosciutto di Carpegna PDO.
The roots of this ham date back to the 15th century, when pigs were raised in the wild in the Marche region. Towards the end of the 1960s, the first plant was built in the heart of the ancient village of Carpegna, a place rich in artistic and cultural beauties.
Today, the production of Prosciutto di Carpegna PDO is regulated by a meticulous specification, which defines the pig breeding area, the processing methods and times. Strict compliance with these rules allows the product to fully fall within the Protected Designation of Origin, respecting its centuries-old history.
In fact, Prosciutto di Carpegna PDO is hand-worked and seasoned according to ancient traditions, handed down from generation to generation and proudly preserved from the Middle Ages to the present day.
